Ingredients

  • 1 cup Red lentils
  • 0.25 cup Fine bulgur
  • 0.25 cup Short-grain rice
  • 3 tablespoons Olive oil
  • 1 medium Onion
  • 2 Garlic cloves
  • 1 tablespoon Tomato paste
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried mint
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 6 cups Vegetable broth
  • 1 for serving Lemon wedges
  • 2 tablespoons Fresh parsley

Directions

Step 1

Rinse the red lentils, bulgur, and rice under running water until the water runs clear. Drain and set aside.

Step 2

In a large pot, heat the olive oil over medium heat.

Step 3

Finely chop the onion and add it to the pot. Sauté until the onion is soft and translucent, about 5 minutes.

Step 4

Mince the garlic cloves and add them to the pot. Cook for another minute until fragrant.

Stir in the tomato paste, paprika, ground cumin, dried mint, salt, and black pepper. Cook for 1–2 minutes to toast the spices and deepen their flavor.

Add the rinsed red lentils, bulgur, and rice to the pot and stir to coat them in the spiced tomato paste mixture.
