Ingredients

  • 1 cup long-grain rice (such as jasmine or basmati)
  • 0.33 cup vermicelli pasta (şehriye)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cups chicken or vegetable stock
  • 1 teaspoon salt
  • 0.25 teaspoons ground black pepper
  • 1 tablespoon optional parsley (for garnish)

Directions

Step 1

Rinse the rice in a fine mesh sieve under cold running water until the water runs clear. This removes excess starch and helps keep the pilaf fluffy. Drain well.

Step 2

In a medium-sized saucepan, melt the butter and olive oil over medium heat.

Step 3

Add the vermicelli to the pan and sauté, stirring constantly, until it becomes golden brown. Be careful not to burn it.

Step 4

Stir in the rinsed and drained rice, ensuring it is coated well with the butter and sautéd for 1-2 minutes to lightly toast the rice.

Step 5

Add the chicken or vegetable stock, salt, and ground black pepper. Stir gently to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan with a tight-fitting lid and let the rice simmer for about 12-15 minutes, or until the liquid has been absorbed.

Step 7

Once the rice is cooked, remove the saucepan from the heat and let it sit, covered, for another 5 minutes to steam. This helps make the rice fluffy.

Step 8

Fluff the pilaf with a fork and transfer to a serving dish. Garnish with optional chopped parsley, if desired.

Step 9

Serve warm as a side dish or complement to your favorite main course.
