Ingredients

  • 2 medium red onions
  • 2 teaspoons sumac
  • 0.5 cups fresh parsley
  • 0.25 cups fresh mint
  • 2 tablespoons lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons red pepper flakes (optional)

Directions

Step 1

Peel the red onions and cut them in half. Thinly slice them into half-moons using a sharp knife or a mandoline.

Step 2

Place the sliced onions in a bowl of cold water and let them soak for 5 minutes. This helps to reduce their sharpness.

Step 3

While the onions are soaking, finely chop the fresh parsley and mint. Set aside.

Step 4

Drain the onions and pat them dry with a clean kitchen towel or paper towel.

Step 5

Transfer the onions to a large mixing bowl and sprinkle the sumac over the top. Toss the onions to evenly coat them with the sumac.

Step 6

Add the chopped parsley and mint to the onions and gently mix them together.

Step 7

In a small bowl, whisk together the lemon juice, olive oil, salt, black pepper, and red pepper flakes (if using) to make the dressing.

Step 8

Pour the dressing over the onion and herb mixture. Toss everything together until well combined.

Step 9

Taste the salad and adjust the seasoning if necessary with more salt, lemon juice, or sumac.

Step 10

Serve immediately as a side dish or garnish for grilled meats, kebabs, or wraps.
