Ingredients

  • 300 g Turkish egg noodles (erişte)
  • 100 g Arugula
  • 4 tbsp Olive oil
  • 2 pieces Garlic cloves
  • 2 tbsp Lemon juice
  • 1 tsp Crushed red pepper flakes
  • 0.5 tsp Ground black pepper
  • 1 tsp Salt
  • 100 g Feta cheese (crumbled)
  • 50 g Walnuts (lightly toasted and chopped)
  • 2 L Water

Directions

Step 1

Bring 2 liters of water to a boil in a large pot and add 1 teaspoon of salt.

Step 2

Add the Turkish egg noodles (erişte) to the boiling water and cook for 8-10 minutes, or until tender but still slightly firm (al dente). Drain and set aside.

Step 3

While the noodles are cooking, heat 4 tablespoons of olive oil in a large skillet over medium heat.

Finely chop the garlic cloves and sauté them in the olive oil until fragrant and lightly golden, about 1-2 minutes.

Add the cooked and drained noodles to the skillet, tossing them gently to coat with the garlic-infused olive oil.
