Grease a square 8x8 inch (20x20 cm) baking dish and line it with parchment paper for easy removal. Set aside.
In a medium saucepan, combine granulated sugar, 175 ml of water, and lemon juice. Heat over medium heat, stirring occasionally, until the sugar dissolves completely.
Increase the heat to medium-high and bring the mixture to a simmer. Use a candy thermometer and continue to heat the mixture until it reaches 240°F (115°C), also known as the 'soft-ball' stage. Once it reaches this temperature, remove the pan from the heat immediately.
In a separate medium saucepan, whisk together 75 g of cornstarch, cream of tartar, and the remaining 300 ml of water until smooth. Place this mixture over medium heat and cook while stirring continuously until it thickens and forms a paste-like consistency.
Once the cornstarch mixture is ready, slowly pour the hot sugar syrup into the paste, whisking constantly to combine. Continue cooking the mixture over low heat, stirring frequently, for about 45 minutes. The mixture will become golden and very thick.
Stir in the rosewater and food coloring (if using) during the final minutes of cooking.
Pour the mixture into the prepared baking dish, spreading it out evenly with a spatula. Allow the Turkish Delight to cool to room temperature, then cover and leave to set overnight.
The next day, mix the powdered sugar and the additional 50 g of cornstarch in a bowl to create the coating.
Invert the Turkish Delight onto a cutting board and peel off the parchment paper. Using a sharp knife, cut it into small squares. Dust each piece generously with the powdered sugar and cornstarch mixture to prevent sticking.
Serve immediately, or store the Turkish Delight in an airtight container at room temperature for up to two weeks. Dust with additional powdered sugar before serving, if desired.
