Ingredients

  • 500 grams Turkey breast, diced
  • 250 grams Pasta (penne or fusilli)
  • 300 grams Broccoli florets
  • 2 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 0.25 teaspoon Red chili flakes (optional)
  • 50 grams Grated Parmesan cheese
  • 1 Lemon, juiced
  • 100 milliliters Chicken or vegetable stock

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the cooking water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced turkey breast and season with salt and black pepper. Cook for 6-8 minutes, stirring occasionally, until the turkey is golden brown and cooked through. Remove the turkey from the skillet and set aside.

Step 3

In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 4

Add the broccoli florets and sauté for 3-4 minutes until they begin to brighten in color.

Step 5

Pour the chicken or vegetable stock into the skillet, cover with a lid, and let the broccoli steam for another 3-4 minutes until tender.

Step 6

Return the cooked turkey to the skillet and stir to combine. Add the cooked pasta and toss everything together.

Step 7

If the mixture seems dry, add a splash of the reserved pasta water to loosen it up.

Step 8

Stir in the lemon juice, red chili flakes (if using), and additional salt and black pepper to taste.

Step 9

Remove from heat and sprinkle the grated Parmesan cheese over the top. Toss gently to melt the cheese and combine well.

Step 10

Serve hot, garnished with extra Parmesan cheese and a drizzle of olive oil if desired.
