Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground turkey
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • 2 15-ounce cans canned white beans, drained and rinsed
  • 1 4-ounce can green chilies, diced
  • 1 cup corn kernels, frozen or canned (optional)
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)
  • 4 pieces lime wedges (optional, for serving)
  • 0.5 cup sour cream or plain Greek yogurt (optional, for topping)
  • 0.5 cup shredded cheddar cheese (optional, for topping)

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and cook for another 1 minute, until fragrant.

Step 4

Add the ground turkey to the pot and cook, breaking it up with a wooden spoon, until no longer pink, about 5-7 minutes.

Step 5

Stir in the cumin, chili powder, ground coriander, smoked paprika, oregano, salt, and black pepper, cooking for 1-2 minutes to toast the spices.

Step 6

Pour in the chicken broth and stir to combine.

Step 7

Add the white beans, diced green chilies, and corn (if using). Stir well and bring the mixture to a simmer.

Step 8

Reduce the heat to low and simmer uncovered for 20 minutes to allow the flavors to meld, stirring occasionally.

Step 9

Taste and adjust seasoning with additional salt and pepper, if needed.

Step 10

Serve hot, garnished with fresh cilantro and your choice of toppings like sour cream, shredded cheddar, or a squeeze of lime.
