Ingredients

  • 1.5 cups Cooked turkey (sliced or shredded)
  • 1 cup Cheddar cheese (or your preferred cheese)
  • 6 pieces Waffles (store-bought or homemade)
  • 3 tablespoons Mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Butter (softened)
  • 0.5 cup Baby spinach (optional)
  • 0.25 cup Cranberry sauce (optional, for serving)

Directions

Step 1

In a small bowl, mix together the mayonnaise and Dijon mustard to create a spread.

Step 2

Take 6 waffles and lay them flat. Spread the mayonnaise-mustard mixture evenly onto one side of each waffle.

Step 3

On 3 of the waffles (the base layer), layer the sliced or shredded turkey, followed by the cheddar cheese, and optional baby spinach leaves.

Step 4

Top each sandwich with the remaining 3 waffles, with the mayonnaise side facing inward to secure the fillings.

Step 5

Spread a thin layer of softened butter on the outsides of the wafflewiches (top and bottom).

Step 6

Heat a large non-stick skillet or pan over medium heat. Place the wafflewiches into the pan, working in batches if needed.

Step 7

Cook each side for 3-4 minutes, pressing gently with a spatula, until the waffles are golden brown and the cheese is melted.

Step 8

Remove the wafflewiches from the skillet and let them cool slightly before cutting them into halves or quarters, if desired.

Step 9

Serve immediately with optional cranberry sauce on the side for dipping.
