Ingredients

  • 2 cups cooked turkey, shredded or diced
  • 8 cups chicken or turkey broth
  • 1 cup white or brown rice, uncooked
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 leaf bay leaf
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped
  • None to taste salt
  • None to taste black pepper

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the diced onion, sliced carrots, and sliced celery to the pot. Sauté for 5-7 minutes, or until the vegetables are softened.

Add the minced garlic and cook for an additional 1 minute until fragrant.

Stir in the cooked turkey, chicken or turkey broth, uncooked rice, dried thyme, dried oregano, and the bay leaf.
