Ingredients

  • 4 medium Zucchini
  • 1 pound Ground turkey
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 medium Yellow onion
  • 1 cup Canned diced tomatoes
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Mozzarella cheese
  • 0.25 cup Balsamic vinegar
  • 1 tablespoon Honey
  • 2 tablespoons Parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the zucchinis in half lengthwise and scoop out the seeds to create a cavity for the filling. Set aside the zucchini flesh.

Step 3

Place the zucchini halves on a baking sheet lined with parchment paper or lightly greased.

Step 4

Finely dice the zucchini flesh that was scooped out, the garlic, and the onion.

Step 5

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and garlic, and sauté until translucent, about 3 minutes.

Step 6

Add the ground turkey to the skillet and cook, breaking it apart with a spoon, until browned and cooked through, about 5–7 minutes.

Step 7

Stir in the diced zucchini flesh, canned diced tomatoes, Italian seasoning, salt, and black pepper. Cook for an additional 3–4 minutes until the mixture is well combined and slightly thickened.

Step 8

Spoon the turkey mixture evenly into the zucchini halves, pressing gently to pack the filling.

Step 9

Sprinkle the stuffed zucchini with shredded mozzarella cheese.

Step 10

Bake in the preheated oven for 20–25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.

Step 11

While the zucchini bakes, prepare the warm balsamic glaze. In a small saucepan over low heat, combine the balsamic vinegar and honey. Simmer for 3–4 minutes, stirring frequently, until it thickens slightly.

Step 12

Remove the stuffed zucchini from the oven and drizzle the warm balsamic glaze evenly over each zucchini half.

Step 13

Garnish with freshly chopped parsley and serve warm.
