Preheat your oven to 375°F (190°C).
Slice the tops off the green bell peppers and remove the seeds and membranes. Set the peppers aside and finely chop the tops.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, and the finely chopped pepper tops. Sauté for 3-4 minutes until softened.
