Ingredients

  • 2 tablespoons olive oil
  • 4 links turkey sausage links
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1 large zucchini
  • 1 medium yellow onion
  • 3 cloves garlic cloves
  • 1.5 cups cherry tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.25 teaspoon red pepper flakes
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 0.25 cup grated Parmesan cheese (optional)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the turkey sausage links to the skillet and cook for 6-8 minutes, turning occasionally, until browned on all sides. Remove the sausages and set them aside on a plate.

While the sausage is cooking, dice the red and yellow bell peppers, zucchini, and yellow onion. Mince the garlic cloves.
