Ingredients

  • 12 ounces Turkey breast, deli-sliced
  • 6 pieces Ciabatta rolls
  • 6 slices Cheddar cheese, sliced
  • 6 tablespoons Mayonnaise
  • 6 teaspoons Honey mustard
  • 6 pieces Lettuce leaves
  • 2 large Tomato, sliced
  • 0.5 medium Red onion, thinly sliced
  • 1 large Avocado, sliced
  • 0.5 medium Cucumber, thinly sliced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground

Directions

Step 1

Preheat a grill pan or panini press to medium heat.

Step 2

Slice the ciabatta rolls horizontally, keeping the top and bottom halves intact. Set them aside.

Step 3

In a small bowl, mix the mayonnaise and honey mustard until combined. Spread 1 tablespoon of the mixture on the cut sides of each ciabatta roll.

Step 4

Layer the bottom half of each roll with 2 ounces of turkey breast, 1 slice of cheddar cheese, 1 lettuce leaf, 1–2 tomato slices, a few thin slices of red onion, slices of avocado, and a few cucumber slices.

Step 5

Sprinkle the assembled ingredients with a pinch of salt and a light grind of black pepper.

Step 6

Close the sandwiches with the top halves of the ciabatta rolls.

Step 7

Lightly press down on the sandwiches and place them on the grill pan or panini press. Cook for about 3–5 minutes, until the cheese is slightly melted and the bread is toasted with grill marks. If using a grill pan, flip the sandwiches halfway through cooking.

Step 8

Remove the sandwiches from the heat and let them rest for 1 minute. Slice each sandwich in half, if desired, and serve warm.
