In a large mixing bowl, combine the ground turkey, half of the chopped onion, 1 minced garlic clove, the egg, breadcrumbs, Worcestershire sauce, salt, and pepper. Mix well with your hands until evenly combined.
Shape the turkey mixture into 4 oval patties, about 3/4-inch thick.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Brown the turkey patties on both sides, about 3 minutes per side. Remove from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the remaining onion and garlic until softened, about 2-3 minutes.
In a small bowl, whisk together the chicken broth and cornstarch, then add the mixture to the skillet. Bring to a simmer, stirring constantly, until the sauce thickens, about 3-4 minutes.
Return the turkey patties to the skillet, cover, and simmer for 10-12 minutes, or until the internal temperature of the patties reaches 165°F (74°C). Spoon the sauce over the patties occasionally during cooking.
While the patties are cooking, prepare the white bean mash. In a medium saucepan over low heat, combine the cannellini beans, milk, butter, and 1 minced garlic clove. Stir until heated through, about 5 minutes.
Using an immersion blender or a potato masher, mash the bean mixture until smooth and creamy. Season with salt and pepper to taste.
Transfer the white bean mash to serving plates, top with the turkey Salisbury steaks, and spoon the pan sauce over the top.
Garnish with chopped parsley and serve immediately.
