Ingredients

  • 12 ounces egg noodles
  • 3 cups cooked turkey, shredded or cubed
  • 10.5 ounces cream of mushroom soup
  • 1 cup sour cream
  • 1 cup milk
  • 4 tablespoons butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons poppy seeds
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup buttery round crackers, crushed
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set it aside.

Step 2

Bring a large pot of salted water to a boil and cook the egg noodles according to the package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the finely chopped onion and cook until softened, about 4-5 minutes. Stir in the minced garlic and cook for an additional 1 minute. Remove from heat.

Step 4

In a large mixing bowl, combine the cream of mushroom soup, sour cream, milk, poppy seeds, salt, and black pepper. Mix well to create a smooth sauce.

Step 5

Stir the cooked turkey, sautéed onion and garlic mixture, and the cooked noodles into the sauce mixture until evenly coated.

Step 6

Pour the mixture into the prepared baking dish and spread it out evenly.

Step 7

In a small bowl, mix the crushed buttery crackers with the remaining 2 tablespoons of melted butter. Sprinkle this mixture evenly over the casserole.

Step 8

Top the casserole with the shredded cheddar cheese.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly and the topping is golden brown.

Step 10

Remove the casserole from the oven and let it rest for 5 minutes. Garnish with chopped parsley, if using, and serve warm.
