Ingredients

  • 1.5 pounds Ground turkey
  • 0.75 cups Breadcrumbs
  • 0.5 cups Crumbled feta cheese
  • 0.5 cups Sun-dried tomatoes (packed in oil, drained and chopped)
  • 2 cloves Garlic cloves (minced)
  • 2 large Eggs
  • 0.25 cups Milk
  • 0.25 cups Fresh parsley (chopped)
  • 1 medium Onion (finely chopped)
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoons Olive oil (for greasing)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or a baking sheet with olive oil and set it aside.

Step 2

In a large mixing bowl, combine the ground turkey, breadcrumbs, crumbled feta cheese, chopped sun-dried tomatoes, minced garlic, eggs, milk, fresh parsley, and finely chopped onion.

Step 3

Season the mixture with salt and black pepper, then use clean hands to mix everything together until just combined. Be careful not to overmix as this can make the meatloaf dense.

Step 4

Transfer the mixture to the prepared loaf pan or shape it into a loaf on the baking sheet. Press firmly to ensure it holds together.

Step 5

Bake in the preheated oven for 50-55 minutes, or until the internal temperature of the meatloaf reaches 165°F (74°C) when checked with a meat thermometer.

Step 6

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.

Step 7

Serve warm as is, or with a side of roasted vegetables, mashed potatoes, or a simple green salad.
