Ingredients

  • 1 pound Ground turkey
  • 3 Garlic cloves, minced
  • 1 Small onion, finely chopped
  • 1 Egg
  • 0.5 cup Breadcrumbs
  • 0.25 cup Grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 12 ounces Penne pasta
  • 1 cup Ricotta cheese
  • 1.5 cups Mozzarella cheese, shredded
  • 3 cups Marinara sauce
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a large baking dish and set aside.

Step 2

To make the meatballs, combine ground turkey, minced garlic, onion, egg, breadcrumbs, Parmesan cheese, Italian seasoning, salt, and black pepper in a large bowl. Mix until just combined, being careful not to overwork the meat.

Step 3

Form the mixture into 1-inch meatballs and place them on a plate or tray.

Step 4

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the meatballs in batches and brown them on all sides (about 2-3 minutes per side). They do not need to cook through at this stage. Once browned, transfer the meatballs to a plate.

Step 5

While the meatballs are cooking, bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

Step 6

In the prepared baking dish, spread 1 cup of marinara sauce on the bottom.

Step 7

Add the cooked penne pasta to the dish. Nestle the browned meatballs evenly among the pasta.

Step 8

Dollop the ricotta cheese over the pasta and meatballs in small spoonfuls.

Step 9

Pour the remaining 2 cups of marinara sauce evenly over the top. Sprinkle the shredded mozzarella cheese over the entire dish.

Step 10

Cover the baking dish with aluminum foil and bake for 25 minutes.

Step 11

Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted, bubbly, and golden brown.

Step 12

Remove the dish from the oven and let it cool for 5 minutes before serving.

Step 13

Garnish with fresh parsley, if desired, and serve hot!
