Ingredients

  • 1 lb Ground turkey
  • 0.5 cup Breadcrumbs
  • 1 Egg
  • 0.5 tsp Garlic powder
  • 0.5 tsp Onion powder
  • 1.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 tbsp Butter
  • 1 Onion, finely diced
  • 2 cloves Garlic, minced
  • 8 oz Mushrooms, sliced
  • 2 cups Beef broth
  • 1 cup Sour cream
  • 2 tbsp All-purpose flour
  • 0.5 tsp Paprika
  • 12 oz Egg noodles, cooked
  • 2 tbsp Parsley, chopped (optional garnish)

Directions

Step 1

In a large bowl, combine ground turkey, breadcrumbs, egg, garlic powder, onion powder, 0.5 tsp salt, and black pepper. Mix until just combined; avoid overmixing.

Step 2

Form the mixture into small meatballs, about 1 inch in diameter. Set aside on a plate.

Step 3

In a large skillet, heat olive oil over medium heat. Add the meatballs and cook for 6-8 minutes, turning occasionally, until browned on all sides. Remove the meatballs and set aside.

Step 4

In the same skillet, melt butter over medium heat. Add diced onion and garlic, and sauté for 2-3 minutes until softened and fragrant.

Step 5

Add sliced mushrooms to the skillet and cook for 5-6 minutes, stirring occasionally, until the mushrooms are golden brown and tender.

Step 6

Sprinkle flour over the mushroom mixture, stirring constantly for 1 minute to remove the raw flour taste.

Step 7

Slowly pour in the beef broth, stirring to create a smooth sauce. Add paprika and 1 tsp of salt. Let the sauce simmer for 3-4 minutes until slightly thickened.

Step 8

Reduce the heat to low and stir in the sour cream until fully incorporated into the sauce.

Step 9

Return the meatballs to the skillet, covering them with the sauce. Simmer for 10 minutes over low heat to ensure they are fully cooked through.

Step 10

Serve the turkey meatball stroganoff over cooked egg noodles. Garnish with chopped parsley, if desired.
