  • 8 cups chicken broth
  • 1 bay leaf
  • 1 head escarole, chopped
  • 0.75 cup small pasta (like ditalini or orzo)
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, minced garlic, egg, salt, and black pepper. Mix until just combined. Shape the mixture into small meatballs, about 1 inch in diameter, and set them aside.

Step 2

Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, and sauté for 5-7 minutes, or until the vegetables are softened.
