Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 3 cups cooked turkey, shredded or diced
  • 1 cup pearl barley
  • 8 cups turkey or chicken stock
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrots, and celery to the pot. Sauté for about 5–7 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for an additional 1–2 minutes until fragrant.

Add the cooked turkey, pearl barley, turkey or chicken stock, dried thyme, dried rosemary, bay leaf, salt, and black pepper to the pot. Stir to combine.
