Ingredients

  • 1 pound Lean ground turkey
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 1 15-ounce can Diced tomatoes, no salt added
  • 1 10-ounce can Enchilada sauce
  • 1 cup Frozen corn kernels
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 8-inch Whole wheat tortillas
  • 1 cup Reduced-fat shredded cheddar cheese
  • 2 tablespoons Fresh cilantro, chopped
  • 1 as needed Non-stick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish with non-stick cooking spray.

Step 2

In a large skillet, heat a small amount of cooking spray or a splash of water over medium heat. Add the diced onion and cook for 3-4 minutes, until softened.

Step 3

Add the minced garlic and cook for 1 minute until fragrant.

Stir in the ground turkey, breaking it up as it cooks, for about 5-7 minutes or until fully cooked and no longer pink.

Step 5

Mix in the diced tomatoes (with juice), enchilada sauce, corn, cumin, chili powder, salt, and black pepper. Simmer for 5 minutes to combine flavors.

Remove the skillet from heat. Spoon a thin layer of the turkey mixture at the bottom of the greased pie dish.

Place one whole wheat tortilla on top of the turkey mixture. Spread about a third of the turkey mixture over the tortilla, followed by a sprinkling of cheese.

Repeat the layers (tortilla, turkey mixture, cheese) two more times, finishing with a tortilla on top.

Spread any remaining turkey mixture on the top layer and sprinkle with the last of the shredded cheese.

Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake an additional 10 minutes, or until the cheese is melted and bubbly.

Step 11

Garnish with chopped cilantro before serving. Let the pie cool for 5 minutes before slicing into 6 equal portions.
