  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 10 small Corn tortillas
  • 1.5 cups Reduced-fat Mexican blend cheese, shredded
  • 1 cup Frozen corn kernels
  • 1 15-oz can Black beans, drained and rinsed
  • 2 tbsp Cilantro, chopped (optional, for garnish)
  • 2 tbsp Green onions, sliced (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with nonstick cooking spray.

Heat 2 teaspoons of olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute.
