Season the turkey cutlets on both sides with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the turkey cutlets in a single layer (you may need to do this in batches).
