Ingredients

  • 4 pieces Turkey breast cutlets
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cups All-purpose flour
  • 4 pieces Prosciutto slices
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic, minced
  • 1 cups Chicken broth
  • 0.5 cups Dry white wine
  • 2 tablespoons Capers, rinsed and drained
  • 1 tablespoon Lemon juice
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Place each turkey cutlet between two sheets of plastic wrap. Gently pound them with a meat mallet to an even thickness of about 1/4 inch.

Step 2

Season the turkey cutlets with salt and black pepper on both sides.

Step 3

Lightly dredge each cutlet in the all-purpose flour, shaking off any excess.

Step 4

Wrap each cutlet with a slice of prosciutto, pressing gently to adhere.

Step 5

Heat olive oil in a large skillet over medium heat. Cook the turkey cutlets in batches, 2-3 minutes per side, until golden brown and cooked through. Transfer to a plate and keep warm.

Step 6

In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.

Step 7

Pour in the chicken broth and white wine, scraping up any browned bits from the bottom of the skillet. Allow the mixture to simmer for 3-4 minutes to reduce slightly.

Step 8

Stir in the capers and lemon juice, then cook for another minute.

Step 9

Return the turkey cutlets to the skillet, spooning some of the sauce over them. Heat for 1-2 minutes to ensure everything is warmed through.

Step 10

Sprinkle the dish with fresh parsley and serve immediately, spooning more sauce over the cutlets. Great alongside roasted vegetables or a simple green salad.
