Ingredients

  • 1 pound Ground turkey
  • 1 cup Couscous
  • 1.25 cups Chicken or vegetable broth
  • 1 tablespoon Olive oil
  • 2 cloves Garlic cloves, minced
  • 1 small Onion, finely diced
  • 1 medium Red bell pepper, finely diced
  • 1 medium Carrot, shredded
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 pieces Tortilla wraps (10-inch)
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 cup Greek yogurt (optional, for serving)
  • 2 tablespoons Chili sauce or hot sauce (optional, for serving)

Directions

Step 1

In a medium saucepan, bring the chicken or vegetable broth to a gentle boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork and set aside.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and diced onion, and sauté for 2-3 minutes until fragrant and softened.

Step 3

Add the ground turkey to the skillet, breaking it into small pieces with a spatula. Cook for 7-8 minutes, stirring occasionally, until fully cooked and no longer pink.

Step 4

Stir in the diced red bell pepper, shredded carrot, ground cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes until the vegetables are tender.

Step 5

Fold the cooked couscous into the skillet with the turkey and vegetables. Mix well to combine. Stir in the chopped parsley, then remove from heat.

Step 6

Warm the tortilla wraps slightly in a microwave or on a non-stick skillet for a few seconds to make them more pliable.

Step 7

Spoon an equal portion of the turkey-couscous mixture onto the center of each tortilla wrap. Fold in the sides and roll tightly into a cylindrical shape.

Step 8

Slice each roll-up in half for serving, if desired. Serve warm with a side of Greek yogurt for dipping and chili sauce for an optional spicy kick.
