Ingredients

  • 3 tablespoons butter
  • 4 slices bacon, diced
  • 1 medium yellow onion, finely chopped
  • 2 celery stalks, diced
  • 2 medium carrots, diced
  • 2 medium russet potatoes, peeled and diced
  • 3 tablespoons all-purpose flour
  • 5 cups chicken or turkey stock
  • 2 cups whole milk
  • 3 cups cooked turkey, shredded or diced
  • 1 cup corn kernels, fresh or frozen
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 cups heavy cream (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)
  • 1 loaf crusty bread (optional, for serving)

Directions

Step 1

In a large pot, melt the butter over medium heat. Add the diced bacon and cook until crispy, about 5–7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the bacon drippings in the pot.

Step 2

Add the chopped onion, celery, and carrots to the pot. Sauté for 5 minutes until softened and fragrant.

Step 3

Stir in the diced potatoes and cook for another 2 minutes, stirring occasionally.

Step 4

Sprinkle the flour over the vegetables and stir to combine. Cook for 1–2 minutes to remove the raw flour taste.

Step 5

Gradually pour in the chicken or turkey stock while stirring to avoid lumps. Bring the mixture to a gentle boil, then reduce the heat to a simmer.

Step 6

Simmer for 15–20 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking.

Step 7

Add the whole milk, cooked turkey, corn, fresh thyme, salt, and black pepper. Stir well and simmer for an additional 5 minutes.

Step 8

For an extra creamy texture, stir in the heavy cream (optional) and heat through without boiling.

Step 9

Taste and adjust seasoning as necessary.

Step 10

Serve the chowder in bowls topped with the reserved crispy bacon and a sprinkle of fresh parsley. Pair with crusty bread, if desired.
