  • 2 cups cooked turkey (shredded or diced)
  • 8 pieces corn tortillas
  • 1 cup vegetable oil
  • 4 pieces tomatoes (roma or plum)
  • 1 large white onion (divided use)
  • 2 pieces garlic cloves
  • 1 piece jalapeño (optional, for heat)
  • 1.5 cups chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup queso fresco (crumbled)
  • 0.25 cup cilantro (chopped)
  • 0.25 cup sour cream or Mexican crema
  • 2 pieces lime wedges

Directions

Step 1

Cut the corn tortillas into 6 triangles each, creating chips.

Step 2

Heat the vegetable oil in a large skillet over medium-high heat. Fry the tortilla triangles in batches until crispy and golden, about 1-2 minutes per batch. Remove using a slotted spoon and place on a paper towel-lined plate to drain. Set aside.

In a blender, combine the tomatoes, half of the onion (roughly chopped), garlic cloves, jalapeño (if using), chicken broth, salt, and black pepper. Blend until smooth.
