Ingredients

  • 3 cups cooked turkey (shredded or cubed)
  • 8 ounces egg noodles
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken or turkey broth
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups frozen peas and carrots
  • 1 cup shredded cheddar cheese
  • 0.5 cup breadcrumbs
  • 0.25 cup parmesan cheese (grated)
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish.

Step 2

Cook egg noodles according to package instructions. Drain and set aside.

Step 3

In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to create a roux.

Gradually add in the chicken or turkey broth, stirring constantly to avoid lumps. Add the milk and continue to stir until the sauce thickens, about 3–4 minutes.
