  • 14.5 ounces diced tomatoes (with juices)
  • 2 tablespoons tomato paste
  • 15 ounces black beans, rinsed and drained
  • 2 cups low-sodium chicken broth
  • 1.5 cups brown rice, cooked
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0 optional toppings: chopped cilantro, shredded cheese, sour cream, sliced jalapeños

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the ground turkey and cook until browned, breaking it up into small pieces with a wooden spoon, about 5-7 minutes.

Remove the cooked turkey from the pot and set aside. In the same pot, add the diced onion, garlic, and green bell pepper. Sauté until the vegetables are softened, about 5 minutes.
