Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 pound ground turkey
  • 2 tablespoons taco seasoning
  • 15 ounces diced tomatoes with green chilies
  • 15 ounces black beans, drained and rinsed
  • 15 ounces pinto beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 1 tablespoon lime juice
  • 6 flour tortillas, cut into 2-inch squares
  • 2 cups shredded Mexican blend cheese
  • 0.25 cup fresh cilantro, chopped (optional, for garnish)
  • 0.5 cup sour cream (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with nonstick spray or a light layer of olive oil.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

Step 3

Add the ground turkey to the skillet and cook, breaking it up with a wooden spoon, until fully browned, about 6-8 minutes.

Step 4

Sprinkle the taco seasoning over the turkey and stir to combine. Add the diced tomatoes with green chilies (including their juices), black beans, pinto beans, and corn. Stir well and cook for 3-4 minutes until heated through.

Step 5

Stir in the lime juice and remove the skillet from heat.

Step 6

Spread a thin layer of the turkey and bean mixture on the bottom of the prepared casserole dish. Layer half the tortilla squares on top, followed by half of the remaining turkey and bean mixture. Sprinkle 1 cup of the shredded cheese evenly over the layer.

Step 7

Repeat with the remaining tortilla squares, turkey and bean mixture, and finish with the remaining 1 cup of shredded cheese on top.

Step 8

Cover the casserole tightly with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 9

Remove the casserole from the oven and allow it to cool for 5 minutes. Sprinkle with chopped fresh cilantro, if desired.

Step 10

Serve warm with a dollop of sour cream, if you like, and enjoy!
