Ingredients

  • 16 pieces Jumbo pasta shells
  • 1 pound Ground turkey
  • 1 cup Artichoke hearts (canned, drained and finely chopped)
  • 1 cup Ricotta cheese
  • 1 cup Spinach (fresh, chopped)
  • 1 cup Parmesan cheese (grated)
  • 1 large Egg
  • 2 cloves Garlic (minced)
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Marinara sauce (store-bought or homemade)
  • 1.5 cups Mozzarella cheese (shredded)
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process, then set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks. Once fully cooked, remove from heat and let cool slightly.

In a large mixing bowl, combine the cooked turkey, chopped artichoke hearts, ricotta cheese, chopped spinach, Parmesan cheese, egg, minced garlic, dried basil, dried oregano, salt, and black pepper. Mix well until all ingredients are fully incorporated.
