Ingredients

  • 4 slices sourdough bread
  • 8 slices sliced deli turkey
  • 4 slices sharp cheddar cheese
  • 1 medium apple (sweet variety like Honeycrisp or Fuji)
  • 2 tablespoons honey mustard
  • 2 tablespoons unsalted butter
  • 1 handful baby spinach (optional)

Directions

Step 1

Thinly slice the apple into rounds or half-moons and set aside.

Step 2

Spread a thin layer of honey mustard on one side of each slice of sourdough bread.

Step 3

Layer 2 slices of turkey on one slice of bread, followed by 2-3 apple slices, 1 slice of cheddar cheese, and a small handful of baby spinach, if using. Top with another slice of sourdough bread, honey mustard side down. Repeat for the second sandwich.

Step 4

Heat a skillet or grill pan over medium heat and add 1 tablespoon of butter. Once melted, place the first sandwich in the pan.

Step 5

Cook for 2-3 minutes on one side until golden brown, then carefully flip. Add the remaining 1 tablespoon of butter to the pan and cook the other side for another 2-3 minutes, until the bread is toasted and the cheese has melted. Repeat for the second sandwich.

Step 6

Remove the sandwiches from the pan, allow to cool slightly, then cut in half and serve warm.
