Ingredients

  • 10 pounds whole turkey
  • 4 tablespoons unsalted butter
  • 3 oranges
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 1 cup honey
  • 2 tablespoons soy sauce
  • 3 garlic cloves, minced
  • 5 sprigs fresh thyme
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups chicken or turkey stock

Directions

Step 1

Preheat your oven to 350°F (175°C). Prepare a roasting pan with a rack.

Step 2

Remove the giblets from the turkey and pat the turkey dry with paper towels.

Step 3

Rub the entire turkey inside and out with olive oil, then season generously with salt and black pepper.

Step 4

Stuff the cavity of the turkey with two oranges (quartered), the thyme sprigs, and one minced garlic clove.

Step 5

In a small saucepan over medium heat, combine orange juice, orange zest, honey, soy sauce, and the remaining minced garlic. Bring to a simmer and stir until well combined. Remove from heat and set aside.
