Ingredients

  • 4 slices Turkish sandwich bread or ciabatta
  • 8 ounces Cooked turkey breast, thinly sliced
  • 1 cup Cheddar cheese, shredded
  • 1 cup Mozzarella cheese, shredded
  • 2 tablespoons Butter, room temperature
  • 1 Yellow onion, thinly sliced
  • 1 Red bell pepper, thinly sliced
  • 1 Zucchini, thinly sliced
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper, freshly ground
  • 0.5 teaspoons Dried Italian seasoning

Directions

Step 1

Preheat a panini press or a grill pan over medium heat.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the slicing onion, red bell pepper, and zucchini, stirring occasionally. Sauté for 8-10 minutes, or until the vegetables are soft and slightly caramelized. Add salt, pepper, and Italian seasoning, then remove from the heat.

Step 3

Spread 1/2 tablespoon of butter evenly over one side of each slice of bread. Flip one slice over so the unbuttered side is facing up.

Step 4

Layer 4 ounces of turkey slices, 1/2 cup of shredded cheddar cheese, and 1/2 cup of shredded mozzarella cheese evenly onto the unbuttered side of the bread.

Repeat with the second sandwich.
