Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic cloves, minced
  • 3 stalks celery stalks, chopped
  • 3 medium carrots, sliced
  • 3 cups green cabbage, shredded
  • 2 medium zucchini, diced
  • 1 28-ounce can canned diced tomatoes (no added salt)
  • 6 cups vegetable broth (low sodium)
  • 2 cups spinach, fresh
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika

  • 2 tablespoons lemon juice, freshly squeezed

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.

Stir in the chopped celery and sliced carrots. Cook for another 4-5 minutes, stirring occasionally.

Add the shredded cabbage and diced zucchini to the pot. Stir to combine.

Step 5

Pour in the canned diced tomatoes and vegetable broth. Stir well.

Step 6

Mix in the Italian seasoning, paprika, red pepper flakes (if using), salt, and black pepper.

Step 7

Bring the soup to a gentle boil. Then reduce the heat to low, cover the pot, and let the soup simmer for 20 minutes.

Step 8

Add the fresh spinach to the pot and stir until wilted, about 2 minutes.

Step 9

Taste and adjust seasonings if needed. Stir in the freshly squeezed lemon juice.

Step 10
