  • 2 medium, sliced carrots
  • 1 medium, chopped zucchini
  • 1 large, diced red bell pepper
  • 15 ounces canned diced tomatoes
  • 4 cups vegetable broth
  • 15 ounces, drained and rinsed canned chickpeas
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh cilantro
  • 1 tablespoon fresh lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and cook for 5-7 minutes, stirring occasionally, until soft and translucent.
