Ingredients

  • 6 large ripe tomatoes
  • 3 tablespoons olive oil
  • 1 medium onion
  • 3 cloves garlic cloves
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1.5 tablespoons harissa paste
  • 1 teaspoon sugar
  • 0.25 cup water
  • 2 tablespoons fresh cilantro
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Dice the ripe tomatoes into small chunks and set aside.

Step 2

Finely chop the onion and garlic.

Step 3

In a large skillet or sauté pan, heat the olive oil over medium heat.

Step 4

Add the chopped onion to the pan and sauté until softened and golden, about 5 minutes.

Step 5

Add the garlic, ground coriander, and ground cumin to the onion. Stir and cook for 1 minute until the spices become fragrant.

Step 6

Stir in the harissa paste and cook for another minute, allowing its flavors to deepen.

Step 7

Add the diced tomatoes, sugar, and water to the pan. Mix well.

Step 8

Season with salt and black pepper, then reduce the heat to low and let the mixture simmer uncovered for 15-20 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens.

Step 9

Taste and adjust seasoning if needed.

Step 10

Garnish with freshly chopped cilantro before serving. Serve warm as a side dish, a topping for crusty bread, or alongside rice or couscous.
