Ingredients

  • 500 grams beef stew meat, cut into 1-inch cubes

  • 400 grams crushed tomatoes
  • 400 grams chickpeas, cooked or canned (drained and rinsed)
  • 2 cups beef stock
  • 2 carrots, peeled and cut into rounds
  • 2 potatoes, peeled and diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 tablespoon harissa paste
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the beef cubes to the pot and sear until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

In the same pot, reduce the heat to medium and add the chopped onion. Sauté for 5 minutes until soft and translucent.
