Ingredients

  • 500 grams carrots
  • 2 units garlic cloves
  • 2 tablespoons olive oil
  • 1 teaspoon harissa paste
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground caraway seeds
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley (chopped)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel and slice the carrots into thick rounds.

Bring a pot of water to a boil and add a pinch of salt. Boil the carrot slices for about 15-20 minutes, until they are tender but not mushy.

While the carrots are cooking, peel and finely mince the garlic cloves.
