Peel the potatoes, cut them into small cubes, and boil them in salted water for about 12-15 minutes, or until tender. Drain and set aside to cool slightly.
In a large mixing bowl, crack the eggs and beat them lightly. Add the turmeric, cumin, paprika, salt, and black pepper. Whisk to combine.
Mash the cooked potatoes roughly using a fork or potato masher, leaving some small chunks for texture. Add the mashed potatoes to the egg mixture.
Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and cook for 5-7 minutes, stirring occasionally, until softened and lightly golden. Add the minced garlic and cook for another 1-2 minutes until fragrant. Remove from heat.
Add the cooked onion and garlic mixture to the potato and egg mixture. Stir in the chopped parsley and mix well until all ingredients are evenly combined.
