  • 0.25 cup Greek yogurt
  • 1 tbsp dijon mustard
  • 1 tbsp lemon juice
  • 2 stalks celery (diced)
  • 0.25 cup red onion (finely chopped)
  • 0.5 cup red bell pepper (diced)
  • 2 tbsp sweet pickle relish
  • 2 tbsp parsley (chopped)
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Cook the rotini pasta according to the package instructions until al dente, about 8-10 minutes.

Step 3

Drain the pasta in a colander and rinse under cold water to cool it down completely. Set aside.

Step 4

While the pasta cools, drain the canned tuna and flake it with a fork in a large mixing bowl.

Step 5

In the same bowl, add the mayonnaise, Greek yogurt, dijon mustard, lemon juice, celery, red onion, red bell pepper, sweet pickle relish, and chopped parsley. Mix until well combined.

Step 6

Season the mixture with salt and black pepper, adjusting to taste.

Step 7

Once the pasta is completely cool, add it to the bowl with the tuna mixture.

Step 8

Gently toss everything together until the pasta is well coated and the ingredients are evenly distributed.

Step 9

Cover and refrigerate the salad for at least 30 minutes to let the flavors meld together.

Step 10

Serve chilled and garnish with extra parsley if desired. Enjoy!
