Ingredients

  • 2 cups Cooked white or brown rice
  • 1 can (5 oz) Canned tuna, drained
  • 2 Eggs
  • 0.5 cup Breadcrumbs
  • 3 stalks Green onions, finely chopped
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Garlic powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 3 tablespoons Vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, combine the cooked rice, drained tuna, eggs, breadcrumbs, and chopped green onions.

Step 2

Add soy sauce, sesame oil, garlic powder, salt, and black pepper to the mixture. Stir well until all ingredients are fully incorporated.

Step 3

Using your hands, scoop about 2 tablespoons of the mixture and shape it into a compact patty or cake. Repeat until all the mixture is used.

Step 4

Heat the vegetable oil in a large non-stick skillet over medium heat.

Step 5

Place the rice cakes in the skillet, making sure not to overcrowd the pan. Fry them in batches if necessary.

Step 6

Cook each side for 3-4 minutes or until golden brown and crisp. Flip carefully to avoid breaking the cakes.

Step 7

Transfer the cooked rice cakes to a plate lined with paper towels to drain excess oil.

Step 8

Serve warm with your favorite dipping sauce or a side salad.
