Ingredients

  • 12 oz pasta (penne or fusilli recommended)
  • 2 5 oz cans canned tuna in olive oil
  • 1 medium zucchini, sliced into half-moons
  • 1.5 cups cherry tomatoes, halved
  • 1 medium red bell pepper, finely sliced
  • 0.75 cup frozen peas
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 0.5 cup heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped
  • 1 tsp lemon zest
  • 0 to taste salt
  • 0 to taste black pepper
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain and set the pasta aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

Add the zucchini, red bell pepper, and cherry tomatoes to the skillet. Sauté for 4-5 minutes until the vegetables start to soften.
