Ingredients

  • 2 cans (5 ounces each) canned tuna
  • 0.5 cup panko breadcrumbs
  • 2 large eggs
  • 2 stalks green onion
  • 1 clove garlic
  • 2 tablespoons (chopped) parsley
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 cup marinara sauce
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Drain the canned tuna thoroughly and place in a large mixing bowl.

Step 2

Finely chop the green onions and parsley, and mince the garlic. Add them to the bowl with the tuna.

Step 3

Add the panko breadcrumbs, eggs, lemon juice, salt, and black pepper to the bowl. Mix everything together until fully combined. The mixture should hold together when pressed; if it's too wet, add a little more breadcrumbs.

Step 4

Form the mixture into 6 evenly-sized patties.

Step 5

Heat the olive oil in a large skillet over medium heat.

Step 6

Once the oil is hot, place the tuna patties in the skillet and cook for 3-4 minutes per side, or until golden brown and heated through.

Step 7

While the patties are cooking, warm the marinara sauce in a small saucepan over low heat, stirring occasionally.

Step 8

Remove the cooked patties from the skillet and place them on a plate lined with paper towels to drain any excess oil.

Step 9

Serve the tuna patties hot, topped with a generous spoonful of marinara sauce. Optionally, garnish with extra parsley for presentation.
