  • 2 pieces Tuna steaks
  • 2 cups Cherry tomatoes
  • 1 cup Chickpeas (canned, rinsed and drained)
  • 1 cup Couscous
  • 1.5 cups Water or chicken broth
  • 3 tablespoons Olive oil
  • 1 whole Lemon
  • 2 cloves Garlic (minced)
  • 2 tablespoons Parsley (chopped)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Paprika
  • 0.25 teaspoons Cumin

Directions

Step 1

Start by preparing the couscous. Boil 1.5 cups of water or chicken broth in a medium saucepan. Once boiling, remove from heat, stir in 1 cup of couscous, cover, and let it sit for 5 minutes. Fluff with a fork and set aside.

Step 2

Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 30 seconds, until fragrant.

Step 3

Add the cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they soften and begin to release their juices.

Stir in the chickpeas, paprika, cumin, salt, and black pepper. Cook for another 3-4 minutes so the flavors meld. Remove from heat and stir in 1 tablespoon of chopped parsley. Set aside.

Slice the tuna steaks into strips and place them over the vegetable and couscous bed.
