Ingredients

  • 2 cups Tuna (canned, drained) or cooked shredded chicken
  • 8 Corn tortillas
  • 2 cups Red enchilada sauce

  • 1 cup Black beans (cooked, rinsed and drained)
  • 1 cup Corn kernels (canned, frozen, or fresh)
  • 1 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Fresh cilantro (chopped, optional for garnish)
  • 2 Green onions (sliced, optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat olive oil over medium heat.

Step 3

Add diced onion and bell pepper to the skillet and sauté for 5 minutes until softened.

Stir in black beans, corn, cumin, chili powder, salt, and black pepper. Cook for 2-3 minutes, then remove from heat.

In a greased 9x13-inch baking dish, spread a thin layer of enchilada sauce on the bottom.
