Ingredients

  • 300 grams water spinach (kangkung)
  • 2 tablespoons vegetable oil
  • 2 pieces red chili
  • 3 pieces garlic cloves
  • 2 pieces shallots
  • 1 teaspoon shrimp paste (terasi)
  • 0.5 teaspoon salt
  • 0.5 teaspoon sugar
  • 50 milliliters water

Directions

Step 1

Wash the water spinach thoroughly under running water, separate the leaves from the stems, and cut the stems into 5 cm lengths. Set aside.

Step 2

Slice the red chilies diagonally and peel and finely chop the garlic and shallots.

Step 3

Heat the vegetable oil in a large pan or wok over medium-high heat.

Step 4

Add the chopped garlic and shallots to the pan and stir-fry for about 1 minute until they become fragrant.

Step 5

Add the sliced red chilies to the pan and continue stir-frying for another minute.

Step 6

Add the shrimp paste (terasi) and mix well with the garlic, shallots, and chilies until the shrimp paste is well incorporated.

Step 7

Toss in the water spinach, stirring quickly to coat it evenly with the aromatic mixture.

Step 8

Add the salt, sugar, and water. Stir-fry for about 3-5 minutes or until the water spinach is vibrant green and tender but still crisp.

Step 9

Taste the stir-fry and adjust the seasoning if needed.

Step 10

Serve immediately as a side dish with steamed rice.
