Ingredients

  • 300 ml Dashi stock
  • 100 ml Soy sauce
  • 100 ml Mirin
  • 2 tablespoons Sugar
  • 5 g Kombu (dried kelp)
  • 20 g Katsuobushi (bonito flakes)

Directions

Step 1

In a medium saucepan, combine the dashi stock, soy sauce, mirin, and sugar. Stir gently to dissolve the sugar.

Step 2

Add the kombu to the saucepan and place it over medium heat. Allow the mixture to heat until just before it reaches a boil, then remove the kombu to prevent it from becoming slimy.

Step 3

Add the katsuobushi (bonito flakes) to the saucepan. Let the mixture come to a gentle boil, then reduce the heat to low and simmer for 5 minutes.

Step 4

Turn off the heat and let the sauce rest for an additional 5 minutes to allow the flavors to infuse fully.

Strain the sauce through a fine-mesh sieve or cheesecloth into a clean container. Discard the used bonito flakes.

Step 6

Let the sauce cool completely to room temperature, then refrigerate it in an airtight container. The sauce will keep in the refrigerator for up to one week.
