Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 0.5 cup Teriyaki sauce
  • 2 pieces Canned pineapple slices (rings)
  • 2 pieces Swiss cheese slices
  • 2 pieces Sesame seed hamburger buns
  • 1 cup Shredded lettuce
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Place the chicken breasts between two pieces of plastic wrap or wax paper, then pound them to an even thickness of about 1/2 inch.

Step 2

Season the chicken breasts on both sides with salt and black pepper.

Step 3

Place the chicken in a resealable plastic bag with the teriyaki sauce. Seal the bag and marinate in the refrigerator for at least 30 minutes, or up to overnight for more flavor.

Step 4

While the chicken is marinating, preheat your grill or grill pan to medium-high heat.

Step 5

Slice the sesame seed buns in half and spread butter on the cut sides. Set aside.

Step 6

Remove the chicken from the marinade, letting any excess sauce drip off. Grill the chicken breasts for about 6-7 minutes per side, or until fully cooked and the internal temperature reads 165°F (74°C). During the last 2 minutes of cooking, place a slice of Swiss cheese on each chicken breast to melt.

Step 7

At the same time, grill the pineapple slices for about 2 minutes per side, or until they are slightly caramelized with grill marks.

Step 8

Toast the buttered sides of the sesame buns on the grill for 1-2 minutes until golden brown.

Step 9

To assemble the burgers, spread 1 tablespoon of mayonnaise on the bottom half of each bun. Layer on shredded lettuce, followed by the grilled chicken with melted Swiss cheese, a grilled pineapple slice, and finally the top half of the bun.

Step 10

Serve immediately and enjoy your homemade Red Robin-style Teriyaki Chicken Burgers!
