Ingredients

  • 2 cups Greek yogurt
  • 1 medium cucumber
  • 2 large garlic cloves
  • 2 tablespoons fresh dill
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel the cucumber, cut it in half lengthwise, and remove the seeds using a spoon.

Step 2

Grate the cucumber using a box grater and transfer it to a strainer or cheesecloth.

Step 3

Sprinkle a pinch of salt over the grated cucumber to help draw out moisture. Let it sit for about 10 minutes.

Step 4

Meanwhile, mince the garlic cloves finely and chop the dill.

Step 5

After 10 minutes, squeeze out as much liquid as possible from the grated cucumber using your hands or by pressing it in the cheesecloth.

Step 6

In a medium mixing bowl, combine the Greek yogurt, squeezed cucumber, minced garlic, chopped dill, olive oil, lemon juice, 0.5 teaspoon of salt, and black pepper.

Step 7

Mix until all ingredients are thoroughly combined.

Step 8

Taste and adjust seasoning if necessary.

Step 9

Chill the tsatsiki in the refrigerator for at least an hour before serving, allowing the flavors to meld together.

Step 10

Serve chilled as a dip with pita bread, vegetables, or as a sauce for grilled meats.
